This is less a recipe than a little permission slip: to buy the tomatoes that smell like tomatoes and call lunch done.
Slice the tomatoes and the softest peaches you can find. Tear the basil rather than reaching for a knife. Add something creamy, a generous pour of olive oil, and the flaky salt you save for just this kind of thing.
Put bread on the table. Pour something cold into a glass. Let the dressing gather at the bottom of the bowl so someone can swipe it up with the last piece of crust.
That is it. The proportions are yours. The point is to eat this outside if you can, and to make it again while the fruit is still good.
